A Little Vietnamese Tradition You Can Bake Yourself

Mooncakes — bánh trung thu — are one of the familiar treats associated with Vietnam’s Mid-Autumn season.

Instead of simply buying one from a bakery, this workshop lets you get your hands into the process and see how a traditional baked mooncake takes shape.

We’ll have the ingredients and equipment ready when you arrive. Then it’s time to get to work. You’ll learn how the filling and dough are portioned, how the cake is wrapped and shaped, and how those distinctive patterns are pressed into the surface.

This is where your mooncake starts looking like a mooncake. Once the cakes have been shaped and pressed into their patterned molds, we’ll prepare them for baking and finish the surface to create that familiar glossy, golden crust.

It is a relaxed two-hour class rather than a formal cooking school experience, so there is plenty of time to work with your hands, ask questions, and enjoy seeing your own batch come out of the oven.

From Ingredients To A Golden Batch

The workshop starts with the ingredients laid out on the table. You prepare the filling, shape it by hand, then move through molding, baking and brushing until the mooncakes reach their deep golden finish.
